Grain-free with a dairy-free option, this loaf is moist, flavourful, and very lightly sweetened with maple syrup to let the bananas really shine!
Enjoy it fresh out of the oven, or slice and store in your fridge or freezer, then grill it up with some butter or coconut oil to enjoy later…
Grain-Free Banana Loaf

Cook time: 45min-1hr
Makes about 8 slices
Ingredients
4 eggs
1/3 cup butter, melted or coconut oil
1/3 cup maple syrup
1 tsp vanilla extract
3 medium ripe bananas, roughly chopped
1/3 cup tapioca flour
1/3 cup almond flour
1/3 cup coconut flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/4 tsp sea salt
1/2 cup chopped walnuts
Directions
Preheat the oven to 350F and grease a loaf pan and line with a thin strip of parchment paper.
In an electric mixer or by hand, whisk together the eggs, maple syrup, melted butter (or coconut oil), and vanilla extract.
Add in the banana and mix until well combined but still slightly chunky.
In a separate bowl combine the flour, baking soda, baking powder, salt, and cinnamon
Mix in the dry mix with the wet until thoroughly combined.
Stir in the walnuts until evenly dispersed.
Transfer to a loaf pan and bake at 350F for about 45 minutes to 1-hour (check by sliding a thin knife into the centre…if it comes out clean it’s all good to go!)
Allow to cool in loaf pan for about 10 minutes before transferring to a wired rack to cool completely before slicing.
