This recipe will convert even the most skeptical junk food lover into a health food believer! I often don’t even tell people that I make them with almond flour and see how they react….which is always very positively! A great snack for parties, or the perfect topper for salads (I especially like it on a Caesar salad), my grain-free chicken tenders are a sure-fire hit. I’ve included three variations on this theme – spicy cumin, savoury herb, and coconut curry. All are awesome, all are easy, and all are kind to your body.
Basic ingredients…
- 1lb boneless, skinless chicken breasts
- 1 cup almond meal
- 2 eggs, lightly beaten
Flavour options….
Spicy Cumin
- 1 tbsp paprika
- ½ tsp garlic powder
- 1 tsp cumin
- 1/2 tsp cayenne pepper
- 1 tsp black pepper
- 1 tsp sea salt
Savoury Herb
- ½ tsp garlic powder
- 1 tsp dried dill
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp dried sage
- 1 tsp dried basil
- 1 tsp turmeric power
- 1 tsp black pepper
- 1 tsp sea salt
Coconut Curry
- 2 tbsp dried coconut flakes (sugar free)
- 1 tbsp curry powder
- 1 tsp cumin
- 1/2 tsp coriander
- 1/2 tsp onion powder
- 1/4 tsp paprika
- 1/4 tsp cayenne pepper
- 1 tsp dried dill
- 1 tsp black pepper
- 1 tsp sea salt
Directions
1. Preheat oven to 375 degrees F
2. Line a baking sheet with parchment paper
3. Slice chicken breasts into long strips, 1-2″ wide
4. Mix together almond meal with the various flavour options
5. Dredge each piece of chicken in egg and then coat with almond mixture
6. Repeat with all chicken pieces
7. Bake for 20-25 minutes, until golden
